For Elaine Lynch, being a licenced practical nurse for 20 years had taken its toll. The long hours on her feet, the drastically changing work schedule and the physical and emotional demands of supporting patients day in and day out had been a rewarding, but challenging, career. So she and her husband Norm began looking for a different line of work. “We drove around and found an industrial area that was just being built,” she recalls. “There was an empty berth in one building and we decided to make a deli out of it.”
Norm built the café in that lot in 2001 and Eastfield Deli has been providing homemade staples to the workers in the area ever since. The neighbourhood grew up around the deli, bringing with it more businesses and busier lunch hours. “I just wanted to try something different,” Elaine says. “It turns out that I love this. The customers are nice, pleasant and happy. I work Monday through Friday from 7:00am to 2:00pm, and then go to look after my elderly mother afterwards.”
